Dimerco and the elimination of volatile phenols

Through its representation Memstar of Australia, Dimerco introduced a new membrane separation procedure into Chile focused in reducing volatile phenols. This service adds to others currently available, such as alcohol tuning (dealcoholization), volatile acidity reduction, wine and must concentration and cross flow filtration.

Volatile phenols, such as 4-ethyl phenol and 4 ethyl guaiacol, derived from contamination by Brettanomyces, can now be removed using a membrane based system. The process uses filtration through semi-permeable membranes and passage of permeate through an absorbent media that retains the volatile phenols. The process is quite quick, and winemakers have the possibility to choose the level of cleaning required from “on-line” tasting. As usual, the service is offered in the client’s cellar.

The wines turn out clean from a wine-tasting point of view and suitable for using as components in mixes or to be presented individually. The service is available for treating everything from relatively small to large amounts of wine.
